Vegetable masala oats are very healthy, crunchy and flavorful recipe which you can in breakfast, brunch, lunch or dinner. I personally like to eat spicy and savory version of oats instead of sweet version. It is a very healthy dish as you can add as many as vegetables of your choice into this recipe and oats are naturally very nutritious.

Ingredients
- ½ cup Oats
- 1 small Onion – Chopped
- 1 Small Tomato – Chopped
- 2 Green Chilies – Finely Chopped (Optional)
- ¼ Cup of Capsicum, Red & Yellow Bell Peppers – Chopped
- ¼ Cup of Beet Root & Carrot – Chopped
- 1 small boiled Potato – Cubes (Optional)
- ¼ Cup of Peas & Green Beans
- ¼ tsp Ginger Garlic Paste
- 2 tsp Vegetable Oil/Ghee
- ¼ tsp Jeera (Cumin Seeds)
- ¼ tsp Mustard Seeds (Sarso)
- ¼ tsp Turmeric (Haldi)
- ¼ tsp Red Chili Powder (Lal Mirch Powder)
- Salt to tast
- 1 tbsp Lemon Juice
- 1.5 cup of water
Instructions
- Heat oil in a pan. Add Jeera & Mustard Seeds, when seeds start cracking, add Onions
- Add Ginger Garlic paste and green chilies, when onions turn to pink in color
- Add turmeric and red chili powder, when onions turn to brown in color. Mix well and sauté for 15 seconds
- Add tomatoes, carrots, beet roots, peas and green beans. Mix well and let it cook for 1 min.
- Add 1.5 cup of water, mix well. When water starts boiling, add oats, salt and mix well
- Keep stirring and add capsicum, red & yellow bell peppers. Cook until oats absorbs all the water
- Add lemon juice, mix well and serve it hot
