Dhokla is a Guajarati (Gujarat, India) dish. It is very light and spongy snack which can be served as a starter or snacks in your kitty parties and birthday parties. This is an ideal dish for people who are very health cautious and for kids’ tiffin also. The ingredients of this dish are easily available in everyone’s home.

Ingredients


For Dhokla

  • 1 ½ cup Besan (Gram Flour/Chickpea flour)
  • 2 tbsp Sooji (Rava/Semolina)
  • 1 tsp Sugar
  • ¼ tsp Haldi (Turmeric)
  • Pinch of Asafoetida (Hing)
  • 1 tsp Eno (Fruit Salt)
  • 1 Glass of Water
  • 2.5 tbsp of Oil (2 tbsp oil is optional)
  • Salt to taste


For Tempering

  • 4-5 Green Chilies
  • ½ tsp Mustard Seeds (Sarso ke Daane)
  • 2 tsp sugar
  • 1 glass of Water
  • 1 tsp oil

Instructions

  1. In a large bowl, filter besan (gram flour) and sooji (semolina) with the help of juice strainer.
  2. Now add hing, salt, sugar, 2 tbsp oil and mix well.
  3. Add water little by little to make medium consistency batter. Batter consistency should be like cake consistency, neither thick nor thin.
  4. Cover the batter and leave it for 10 min.
  5. After 10 min. boil the water in a steamer or wok or cooker and cover it make the steam.
  6. Meanwhile, add Eno to the batter and mix it well. Now you’ll see that batter starts getting foamy.
  7. Grease the pan with the left 0.5 tsp oil and pour the batter into a greased pan. Tap the pan two times and now cook (steam) over a low flame for 20 minutes.
  8. Check the Dhokla with a toothpick or with a butter knife by inserting it into the centre of Dhokla, if it’s come out clean, which means Dhokla is ready.
  9. For tempering, heat the oil in a frying pan, add mustard seeds. When mustard seeds start cracking, add green chilies and sauté for 30 seconds.
  10. Add a glass of water into the tadka and add sugar. Boil it for 1-2 minutes.
  11. Pour the tempering over the dhokla and cut into a square pieces.
  12. Serve the Dhokla when it’s cool with green chutney.b
