Vegetable chow mein noodles are made with stir-fried vegetables and typical Chinese flavoring for instance garlic, ginger, soy sauce. It’s an enormously delicious dish which can be served as main course and it’s one of my favorite recipes. You can add more vegetables of your choice to the dish to make it more healthy and tasty. Please follow the below recipe step by step to make yummy vegetable noodles at home very quickly and easily.

Vegetable Chow Mein Noodles Recipe

Ingredients:

  • 400g Noodles – Boiled
  • 2 tbs vegetable oil or olive oil for cooking
  • 3 clove of Garlic-chopped
  • Small piece of Ginger-grated
  • 1 onion-sliced
  • 1 medium sized carrot-sliced

  • ½ medium sized green capsicum-sliced
  • ½ red and yellow bell pepper-sliced
  • ½ small bowl mushrooms-sliced

  • ½ cup of broccoli

  • 1 small bowl cabbage-sliced
  • ¾ bowl of green peas-boiled
  • ½ bowl pannier or tofu
  • Green chills-chopped
  • 2 green or spring onion-chopped
  • ½ tsp black pepper powder
  • Salt to taste
  • 2-3 tbs Tomato ketchup
  • 3 tbs soy sauce
  • 3 tbs white vinegar
  • 1 tbs red chili sauce


Instructions

  1. Boil the water in a large pot; add 1 tsp salt and 2 tbs of oil to boiling water. Add and cook the noodles as per the direction on the package or till noodles become soft
  2. Drain thoroughly in cold water once they are boiled and toss in vegetable or olive oils to keep noodles separate.
  3. Sprinkle 2 tbs of vegetable oil over the noodles to avoid sticking
  4. Heat the oil in a large pan, when the oil is hot, add garlic and ginger and cook till they change their color to pink or light brown
  5. Now add onions, green chilis and mushroom. Stir fry them till they reduce in size.
  6. Add carrots and cook for 2-3 minutes with onion and mushrooms.
  7. Now add cabbage and stir frequently until softened but still crunchy
  8. Add green capsicum and stir fry for 1 minute. Add red and yellow bell pepper and stir them once.
  9. Now at the point of time, add tomato ketchup, soy sauce, vinegar, chili sauce, black pepper and salt. Mix them altogether with vegetables.
  10. Add Broccoli and paneer or tofu. Mix well.
  11. Add Noodles and mix it with vegetables and sauce for 3-4 minutes.
  12. Garnish with chopped green or spring onion and serve.


Tips:

  1. Rice noodles can also be used instead of regular noodles.
  2. Apple cider vinegar can also be used instead of normal white vinegar. Apple cider vinegar is more healthy and nutrition values.
  3. Paneer or tofu, baby corns and sprouts can also be added.
  4. You can also add sauces and spices after adding noodles.
