Sambar is south indian stew made out of lentils, vegetables and special blend of spices. Sambar is a must gravy dish in South India which is almost served with every dish; like with rice, idli, dosa and uttapam.

Sambar is made out of Toor Dal and vegetables like, carrot, drumsticks, potato, raddish, tomato, onion, eggplant. It has little sour taste due to tamarind pulp added to it. It is very nutritious dish which can be eaten anytime of the day.

You can always make sambar with your choice of vegetables or whatever is available at home. Today I am making sambar with raddish and carrot only. Please follow step-by-step recipe to make delicious and mouth watering Sambar (सांभर) at home :-

Ingredients

  • ¾ cup of Toor Dal
  • 2 medium sized Raddish (cut in Small Chunks)
  • 2 medium sized Carrot (cut in Small Chunks)
  • ¼ cup of Tamarind Pulp
  • ½ tsp of Mustard Seeds (sarso)
  • 2 tsp Sambar Masala
  • ½ tsp Turmeric (Haldi)
  • ½ tsp Red Chili Powder (Lal Mirch)
  • 1 tsp Coriander Powder (Dhaniya Powder)
  • ¼ tsp Asafoetida (Hing)
  • ¼ tsp Garam Masala
  • Few Curry Leaves
  • 1 tsp Salt or to taste
  • 2 tbsp Vegetable Oil
  • Water as required


Instructions

  •  First wash the toor dal for 4-5 times, add it to pressure cooker. Add washed, cut (small chunks) carrot and raddish. Add 3 cups of water, turmeric, salt and 1 tsp of Sambar Masala.
  • Turn the flame to low after 1 whistle and cook it for another 10 minutes on low flame.
  • Once the pressure tranquil down, open the lid of pressure cooker to add the tamarind pulp, mix it well.
  • In a large pan, heat the vegetable oil. Once the oil is hot, add mustard seeds. When Mustard Seeds start cracking, turn the flame to low and add asafoetida, coriander powder, red chili powder, 1 tsp of sambar Masala, curry patta, mix all together. Add 3 tbsp of water and let the masala cook for 1 min.
  • Now pour the boiled dal and vegetales in to the Masala and Mix it well. Now add the water to adjust the consistency of the Sambar.
  • Add garam Masala and cook it for 5 min. on medium flame. Switch off the flame and serve it hot with rice, idli, dosa or uttapam.


Tips

  • To avoid masala to burn, always add 3-4 tbsp of water when you add the dry Masala to the oil.
  • You can also separately boil the vegetables if you want to keep them crunchy.
  • Adjust the spices according to your taste; you can add chopped green chilies to the tadka if you like it spicier.
