Fried Idli – Leftover Idli Fry – Masala Idli

Fried Idli Recipe

Ingredients
- 8-10 Leftover Idlis or freshly make idli – Cut in 4 pieces
- 5-6 Curry Leaves
- 3 Cloves of Garlic – Chopped
- Small piece of Ginger – Grated
- 1 medium sized Onion – Finely Sliced
- 2 medium sized Tomatoes – Finely Chopped
- ½ cup of white Mushroom – Sliced
- 1 medium sized Carrot – Sliced
- ½ cup of Red Bell Pepper – Sliced
- ½ cup of Yellow Bell Pepper – Sliced
- ½ cup of Capsicum – Sliced
- 2 green Chilis – Finely Chopped
- 2 tbs Vegetable Oil
- Pinch of Asafoetida Powder
- ½ Tsp Mustard Seeds
- ½ tsp Jeera or cumin seeds
- ¼ tsp Turmeric
- ½ tsp red chili powder
- ¼ tsp Garam Masala
- 2 tbs Tomato Ketchup
- Salt to taste
Instructions
- Heat the Oil in a pan; add Asafoetida Powder or hing, mustard seeds and cumin seeds.
- Once they splutter, add curry leaves, ginger, garlic and green chilis. Once they turn pink or light red in color add onions and turmeric. Mix well.
- Now add mushrooms, carrot and sauté them for 2-3 minutes till the onions and mushroom change in color.
- Now add red chili powder and sauté for 30 seconds.
- Add tomatoes and cook until it gets soft.
- Add Salt to taste
- Add bell peppers, capsicum and cook only for 30 seconds so that it will not change in color and remain crunchy.
- Add ketchup and mix well
- Now add idlis and mix very well for 1-2 minutes only
- Serve hot with a cup of tea, coconut chutney or peanut chutney.
Tips:
- Pav bhaji Masala can also be added to add more spicy taste.
- Lime juice can also be added at the end to add some tangy taste.
- Do not cut idli in more than 4 pieces to avoid it to gets crumbled.
